Everyone loves the dream pieces: now also dream pieces without eggs!

For a few months now, the dream pieces have been the mega-super-hype in food blogs. I always eagerly followed the posts and posts everywhere. For whatever reason, I didn't think about converting it into a form that was acceptable to me and many others. Only last Saturday, when I was at the girls' scrap Secret Santa, when I could barely keep my fingers to myself when the dream piece tin was opened, I thought: Why don't you just try it: dream pieces without eggs, gluten-free, optional Low fructose, soy-free and vegan?

Dream pieces without eggs and low in allergens

Now I finally did it and they succeeded straight away. Of course I had to completely remodel the recipe. I also had to do without soy and egg substitutes.

The name says it all, I can tell you that. They taste a little similar to vanilla crescents, but they're quick and easy to make and I think they're even better, I like the consistency.

I first baked 10 pieces as a test. I wanted to know if they taste good and stay firm before I use all the dough. When I had the first piece in my mouth and tasted it, I knew why they have that name.

You can enjoy dream pieces all year round and not just at Christmas time

The dream pieces are not just for the Christmas season, you can bake them all year round. There are countless possible variations. I have mentioned a few above the ingredients.

The best thing about the happiness makers: They are extremely easy to make.

The recipe is listed as low in histamine, which many people with histamine intolerance can tolerate almonds well. So please pay attention to your personal tolerance. There are also options for replacing the almonds above the ingredients.

Dream pieces without eggs and low in allergens! They still taste heavenly and I recommend baking the entire batch of 100 pieces. They're gone faster than you can see.

Ingredients

  • 500 g gluten-free universal flour mix Brand doesn't matter
  • 200 g Almonds ground
  • 250 g Margarine (Alsan)
  • 200 ml almond cream
  • 2 parcel vanilla sugar (or a little more erythritol and a little more vanilla pulp)
  • 1 Piece Vanilla pod of which the pulp
  • 2 HE Banana apple pulp or banana pulp
  • 1 HE Apple Cider Vinegar *
  • 2 HE Ground psyllium husks
  • 150 g Cane sugar *
  • 1 Prise Salt *
  • 100 g powdered sugar or erythritol, rice or grain sweetener

YOU STILL NEED THIS

  • 1 Piece cling film
  • 1 Piece baking paper
  • 1 Piece Backmatte if available or large board
  • 2-3 HE Flour gluten free for the work surface
  • 1 Piece mixing bowl

SWAP INGREDIENTS

My recipe makes about 100 pieces. Just do half if that's too much for you. For me, the 100 gluten-free dream pieces fit on 2 trays. Can't you tolerate almonds? Then use cashews, desiccated coconut or other nuts that you can tolerate. You can simply grind them finely. Would you like to change the taste a little? No problem. Cinnamon works well, as does orange peel or matcha. I now really enjoy baking with banana-apple pulp. It's not very overpowering in taste. Surprisingly, I tolerate it really well, even though I have a lot of trouble with apples because of sorbitol and fructose. I think the quantity here is so small that it works. Otherwise use pure banana pulp or another compatible fruit pulp. Almond cream is fromEcomil* available. I like to bake with youcrystalline rice sweetness*,grain sugar* or alsoErythrit*. All sugar alternatives are tolerated by people with fructose intolerance.* Amazon Affiliate Link With the small commission I receive, I partially finance my technology costs.

Instructions

  • Prepare a mixing bowl. Add the margarine in pieces. Then add all the other ingredients, except the powdered sugar. Now knead the mixture very well by hand. I'm not really into kneading by hand. I do this with the food processor.

  • Wrap the dough in cling film and put it in the fridge for at least 1 hour. The gluten-free dough needs this time. Don't be surprised, the dough stays quite soft. That is OK.

  • You can put the powdered sugar in a slightly larger bowl. As soon as the cooling time is finished, heat the oven to 180 degrees top/bottom heat or 160 degrees fan oven.

  • It's best to use a baking mat or other surface. Otherwise the worktop will be completely messed up.Take some of the dough, a small handful of dough. Place it on the floured worktop and carefully roll it into a roll about 1.5 cm thick. Then cut off pieces of about 2 cm and place them on the baking tray with baking paper.

  • Bake the gluten-free dream pieces at 180 degrees top and bottom heat / 160 degrees fan for about 15 minutes. Every oven bakes differently. Please check how the little dream pieces are doing from the tenth minute onwards. They should not brown, at most they should brown minimally. Mine took 16 minutes the first run and even 18 minutes the second.

  • As soon as they are baked, take them out and place them on a rack so that they can cool down a bit.Then you bake the second batch.

  • From the first batch, take about 10 still warm dream pieces and put them in the bowl with the powdered sugar. Now shake and swirl carefully so that the powdered sugar can spread around your gluten-free dream pieces. Then place again on a rack and let cool.Your dream pieces are ready. They are low-allergenic and super tasty. Because of all the "special ingredients" they don't dry out as quickly as many gluten-free baked goods, which unfortunately often do.

  • The dream pieces also make a wonderful gift. Simply pack them in a glass, decorate and give away joy, no dream pieces. Stored in a cool tin in a tin can, they will keep wonderfully for a few weeks.

I adapted your wonderful recipe... Put everything in a piping bag and let it rest in the fridge for 1 hour...
Only had applesauce and hazelnuts. I replaced some of the sugar with beet syrup. For the flour, I mixed 1P vanilla pudding with millet flour and a little coconut flour. Otherwise everything is like yours. They are heavenly!

If I actually just want to replace the egg yolk with low histamine from the original recipe...how do I do that?

Hello Steffi,

I baked a tray and they were all eaten within a few days. Since I'm not a big vanilla fan, I added lemon zest. They all tasted great and worked wonderfully. I found it very sweet, next time I will use less sugar and maybe leave out the powdered sugar.

I would like to try other flavors. Have you ever flavored them with coffee?

And do you think you could also incorporate marzipan? I still have some left, maybe it would be similar to the Stollen confectionery?

Hello Steffi,
I already tried it yesterday. (Your answer was only read today) The marzipan thing worked very well, orange peel and lemon peel were also included. Everything has to go ;)) I extended the baking time a little.
The coffee thing could be optimized even further. They have become very tart and bitter. Maybe I used too much coffee or too little cocoa, or both. How much coffee did you add?

Hello, I finally dared to try the dream pieces and they are absolutely delicious^^

But what is going on at EcoMil??? I had already bought almond cream 3 months ago and wanted to buy more after the baking success because I wanted to use the dream pieces for Secret Santa. But 6 euros for 200ml of almond cream!!!! What happened? In the summer I got the almond cream for €1.65.

I'm asking this because you know so much. I read that I can replace the almond cream.

Thank you for the great recipe, even though I didn't quite succeed.
It was probably the flour (Rewe free from, consists of potato starch, corn starch, corn flour, rice flour, guar gum).
My dream pieces were soft and turned into a slightly sticky, floury mass in the mouth and also tasted very floury.

I will get the flour you use from Doves Farm and give it another try :)

Hello Annette, the flour you use should work. Just leave them in the oven for 5 minutes longer. Then try one. These flours are so different. You may even need to bake 10-15 minutes longer. LG Steffi

So, now I'll report back on my first attempt at baking: 😀 Well, I only made half of it. I used the following flour mixture: 25 g lupine flour, 25 g chestnut flour, 100 g millet flour (self-ground) and 100 g rice flour (self-ground). I also used oat cream (from DM) instead of almond cream (I can't get it in any store here). I used Xucker for the dough and normal powdered sugar (made from raw cane sugar) for the outside. What happened to me: I quickly tipped the tray with the dream pieces onto the cake rack - and in the process a few pieces crumbled!!! I didn't know they were so sensitive... B| They taste fantastic (as the name suggests 😉).

Unfortunately, I can't tolerate almonds, other nuts, or soy, so my only alternative to cream is rice cream or coconut milk. However, rice cream does not contain any protein, which is what “replaces” the cream in nut creams. But if it's just about the creamy consistency, then rice cream should work, right?

Hello Steffi,
Schär's flour for cakes and cookies is apparently only available at Christmas time. I can't find it anywhere in my area and have been shopping in several stores. The flour we currently have available from Schär is suitable for all cooking applications. It's a shame - I can still go to Austria and see if it might be available there. Otherwise I have to use other flour. Pretty difficult if I had to urgently rely on this particular flour. I would have to buy online. But I can switch to other universal flour. This is also available from other brands and it is definitely gluten-free.

Hello Anja, the psyllium husks are used for better moisture in gluten-free baking. You really have to try out whether chia seeds guarantee this. But the idea is great and I can imagine it working. I just tried my gluten-free dream pieces (with psyllium), they are now 3 weeks old and not at all dry.

So, my 2nd attempt worked.
Almond free!
I used coconut cream instead of almond cream. Coconut flour instead of almonds. But 4 tablespoons of apple mango pulp and a dash of coconut milk.

The dough was buttery soft. We also used coconut blossom sugar. Instead of powdered sugar, amanprana also offers coconut blossom sugar in white.

This means that the Traun pieces are sugar-free and nut-free.

Dear Steffi, it worked wonderfully, I changed even more:

Instead of sugar, I used homemade date paste (soaked 150g in 150 ml and then pureed) and ground birch sweetener as powdered sugar - my older son liked it and I already thought about it with the dough...

Tomorrow I can write whether it went down well at work. I baked these parts as a souvenir for my birthday (50th).

There are three or four flours from Schär. Various bread baking mixes, flour for cooking and flour for cakes and cookies. Funny - but that's actually the case - here with your dream pieces, if you want to bake with them, you need the flour for cakes and cookies. Then it depends again on whether you are also allergic to wheat. Schär’s flours are also wheat-free. Baking with this flour works well for cakes. It should be the same with cookies. You can kill for that.
I also can't take an apple or a banana. I always make a puree out of Sharon fruit, it's a great substitute; for the vinegar I had to use Mirabelle vinegar. I carefully made holes in a tray with the handle of a wooden spoon, filled them with jelly and put them in the freezer again so that they would get really hard and then off to the warm room...:-). Delicious, delicious, delicious…..like little cakes.

I would really like to try the recipe, but I don't have any psyllium seeds in the house. Can I use guar gum or corn flour/water as an alternative (egg substitute)? I don't have any applesauce either.
