I cut the mushrooms more coarsely for this recipe so that they don't get lost in the risotto. I also fish out a few for later after frying and fold them in before serving the dish so that there is something for the look and the bite.

It is also important to note that the risotto must be constantly stirred. The reason is so that the starch separates from the grain. This process gives the dish a nice, creamy consistency. A little fresh parsley rounds the whole thing off perfectly.

Ingredients

  • 200 g Risotto Reis or rice pudding
  • 3 HE olive oil
  • 400-500 g Mushrooms here mushrooms and king oyster mushrooms
  • 2 Shallots
  • 2 Garlic cloves
  • 100 ml White wine alternatively 100 ml more broth
  • 700 ml hot vegetable broth
  • 50 g Parmesan
  • 20 g Butter
  • 2 HE fresh parsley
  • n.B. Salt pepper

  • Clean the mushrooms and cut them into small pieces.

  • Peel the shallots and garlic and cut each into fine cubes.

  • Grate Parmesan and chop parsley.

  • Heat 2 tablespoons of olive oil in a pot.

  • Fry the mushrooms on high heat for about 4-5 minutes. Then remove about half of it from the pot and keep it for later.

  • Add 1 tablespoon of olive oil and now add the onions, garlic and risotto rice and sauté together on medium heat for about 2-3 minutes.

  • Now optionally deglaze with white wine and stir well. Alternatively, start directly with the hot vegetable broth.

  • Over medium heat: Add broth again and again in 100-150 ml increments and stir vigorously. If the rice slowly starts to stick to the pot, add more broth. It's important that you stir a lot so that it becomes nice and creamy.

  • Once the broth has been used up, the rice should be al dente. If it is too hard, add a little more broth.

  • Fold in cold butter and grated Parmesan. Also fold in the mushrooms and coarsely chopped parsley and refine with freshly ground pepper and salt.
