Possible problems, questions & tips

The cookie dough will not be smooth, but rather crumbly

It usually helps to simply knead some more (then you get a kind of crumble) and then finish it by hand. Attention: kneading for too long is not good either! If the dough seems too dry overall, you can add a teaspoon of ice water.

The cookie dough crumbles when rolled out

Immediately after the cooling time, the dough ball is still very hard. First let it reach room temperature briefly and then knead or flatten it again briefly with your hand. If the dough is crumbly when you roll it out, there may have been too little fat in the dough or too much flour on the worktop. It's better to use a silicone baking mat or roll out the dough between two layers of foil.

The cookie dough is too soft

Leave it in the fridge longer and/or add some additional flour a tablespoon at a time. Leftover dough in particular should always be kept cool.

How long should you bake cookie cutters and at how many degrees?

  • Place flour and sugar in a bowl. Add the butter in small pieces and the egg and knead into a shortcrust pastry. The dough may seem crumbly at first, but with further kneading it becomes a kind of crumb and finally a hom*ogeneous dough. If necessary, finish with your hands at the end.

  • Form the dough into two balls and wrap in foil and refrigerate for at least half an hour. Longer is even better.

  • Heat the oven to 175 degrees top and bottom heat. Take the first dough ball out of the fridge and let it come to room temperature briefly. Flatten slightly with your hand. Then roll out on a lightly floured work surface or, even better, between foil.

  • Depending on the desired size, cut out approx. 20-30 cookies and place them on a baking tray lined with baking paper, leaving a little space between them. Do the same with the second portion of dough. Knead leftover dough together again and again and cool briefly again.

  • Brush the cookies with a beaten egg yolk if desired. Depending on the thickness, bake until golden, about 10-12 minutes. Allow to cool, remove from the tray and decorate as desired with icing, decorative sprinkles, etc. (see tips).

Remarks

  • The cookie cutters taste absolutely delicious. If you want to decorate them additionally, you have many options:
  • Before baking, brush with a beaten egg yolk and decorate with (bake-proof) sugar sprinkles if desired.
  • After baking, let it cool down and add itfrostingbrush and sprinkle with sugar decorations. Roughly 200g of powdered sugar and around 4 tablespoons of water or lemon juice are required for the amount of cookies.
  • Alternatively, carefully melt white or dark chocolate coating and use it for spreading. Instead of completely covering the cookies, you can just spread fine lines of chocolate on them.
